- Step 1: In a large saucepan, heat olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes, until translucent and fragrant.
- Step 2: Add minced garlic and sliced wild mushrooms to the pan. Cook for about 5-7 minutes until the mushrooms are tender.
- Step 3: Stir in fresh thyme leaves and orzo pasta, mixing well to coat.
- Step 4: Pour in vegetable broth and bring to a boil. Reduce heat to a simmer and cook for about 10-12 minutes until the orzo is al dente.
- Step 5: Remove from heat and stir in grated Parmesan cheese. Season with salt and pepper to taste.
- Step 6: Serve hot, garnished with fresh thyme sprigs if desired.
Notes
If you want a creamier texture, consider adding a splash of cream or a dollop of cream cheese when mixing in the Parmesan.
