  • 2 tbsp olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 8 oz wild mushrooms sliced
  • 1 tsp fresh thyme leaves
  • 3 cups vegetable broth
  • 1 cup Parmesan cheese grated
  • Salt and pepper to taste
  • Fresh thyme sprigs for garnish (optional)

Method
 

  1. Step 1: In a large saucepan, heat olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes, until translucent and fragrant.
  2. Step 2: Add minced garlic and sliced wild mushrooms to the pan. Cook for about 5-7 minutes until the mushrooms are tender.
  3. Step 3: Stir in fresh thyme leaves and orzo pasta, mixing well to coat.
  4. Step 4: Pour in vegetable broth and bring to a boil. Reduce heat to a simmer and cook for about 10-12 minutes until the orzo is al dente.
  5. Step 5: Remove from heat and stir in grated Parmesan cheese. Season with salt and pepper to taste.
  6. Step 6: Serve hot, garnished with fresh thyme sprigs if desired.

Notes

If you want a creamier texture, consider adding a splash of cream or a dollop of cream cheese when mixing in the Parmesan.
