- Prepare the Ingredients: If you haven’t done so already, cook the rice and let it cool. Day-old rice works best as it’s drier and prevents clumping. Chop all your vegetables and set them aside.
- Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once the oil is hot, add the diced onion and cook until translucent, about 3-4 minutes.
- Add Garlic and Vegetables: Stir in the minced garlic and mixed vegetables. Sauté for another 2-3 minutes until the vegetables are tender.
- Scramble the Eggs (Optional): If you're using eggs, push the vegetable mixture to one side of the skillet. Crack the eggs into the empty side and scramble them until fully cooked, then mix them with the vegetables.
- Combine with Rice: Add the cooked rice to the skillet, breaking up any clumps. Stir everything together to combine well.
- Season the Rice: Pour the soy sauce over the rice mixture and stir to evenly distribute the sauce. Add sesame oil if desired, and season with salt and pepper to taste.
- Finish with Green Onions: Toss in the sliced green onions and mix well for an extra burst of flavor. Cook for an additional 1-2 minutes to heat everything through.
- Serve: Remove from heat and serve your vegetable fried rice hot. Enjoy as a side dish or a main meal!
