  • 1 1 lb package Cheese Tortellini
  • 1/2 cup Pesto Store-bought or homemade
  • 1 pint Cherry Tomatoes Halved
  • 1/4 cup Red Onion Finely chopped
  • 1/4 cup Fresh Basil Chopped
  • 1/2 cup Shredded Parmesan Cheese
  • 2 tablespoons Olive Oil
  • to taste Salt and Pepper

  • Cook tortellini according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process.
  • In a large bowl, combine the cooked tortellini, pesto, cherry tomatoes, red onion, and fresh basil.
  • Drizzle with olive oil and gently toss to combine.
  • Stir in half of the Parmesan cheese.
  • Season with salt and pepper to taste.
  • Serve immediately or chill for later. Before serving, top with remaining Parmesan cheese.

Notes

For a vegetarian option, ensure your pesto is vegetarian. You can add other vegetables like bell peppers or zucchini for extra flavor and nutrition. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
