- In a large skillet, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
- Add the ground chicken to the skillet, breaking it up with a spatula. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- In a small bowl, mix together the fish sauce, soy sauce, lime juice, brown sugar, cumin, coriander, and chili powder. Pour this mixture over the cooked chicken and stir well to combine.
- Remove the skillet from the heat and stir in the chopped mint and cilantro.
- To serve, spoon a portion of the chicken mixture into a lettuce leaf, and top with sliced cucumbers and carrots. Squeeze a lime wedge over the top for added flavor.
- Roll up the lettuce leaf to enclose the filling and enjoy!
