  • 1 lb Ground chicken
  • 1 tablespoon Vegetable oil
  • 1 Small onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Fish sauce
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 1 tablespoon Brown sugar
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1/2 teaspoon Chili powder Adjust to taste
  • 1/4 cup Fresh mint leaves, chopped
  • 1/4 cup Fresh cilantro leaves, chopped
  • 1 head Lettuce leaves (butter or romaine) Leaves separated for wrapping
  • Sliced cucumbers For serving
  • Sliced carrots For serving
  • Lime wedges For serving

Method
 

Instructions
  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  4. Add the ground chicken to the skillet, breaking it up with a spatula. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  5. In a small bowl, mix together the fish sauce, soy sauce, lime juice, brown sugar, cumin, coriander, and chili powder. Pour this mixture over the cooked chicken and stir well to combine.
  6. Remove the skillet from the heat and stir in the chopped mint and cilantro.
  7. To serve, spoon a portion of the chicken mixture into a lettuce leaf, and top with sliced cucumbers and carrots. Squeeze a lime wedge over the top for added flavor.
  8. Roll up the lettuce leaf to enclose the filling and enjoy!
