  • 1 lb Andouille Sausage Sliced into 1/2-inch thick rounds
  • 1 lb Shrimp Peeled and deveined
  • 1 lb Potatoes Small red potatoes, quartered
  • 4 ears Corn on the Cob Shucked
  • 1 medium Onion Chopped
  • 4 cloves Garlic Minced
  • 2 tbsp Cajun Seasoning
  • 4 cups Water

  • In a large pot, combine water, Cajun seasoning, chopped onion, and minced garlic.
  • Bring the mixture to a boil over high heat.
  • Add the sliced andouille sausage and quartered potatoes to the boiling water. Reduce heat to medium-high and simmer for 10 minutes.
  • Add the corn on the cob to the pot and continue to simmer for another 5 minutes.
  • Add the shrimp to the pot and cook for 2-3 minutes, or until pink and cooked through.
  • Remove the pot from the heat and let it sit for 5 minutes before serving.
  • Serve immediately. Enjoy!

Notes

For extra flavor, add a bay leaf or a pinch of cayenne pepper to the boiling water. Feel free to adjust the amount of Cajun seasoning to your liking.
