A quick and easy weeknight meal! Juicy steak and colorful peppers and onions are cooked together on a sheet pan for minimal cleanup.

  • 1.5 lbs Steak Sirloin, flank steak, or skirt steak, thinly sliced against the grain
  • 2 Bell Peppers Assorted colors, sliced into strips
  • 1 large Onion sliced into strips
  • 2 tbsp Olive Oil
  • 2 tbsp Fajita Seasoning or your favorite taco seasoning
  • 1 tbsp Lime Juice freshly squeezed
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 8 Flour Tortillas Warm before serving
  • Toppings of your choice Sour cream, guacamole, shredded cheese, salsa

Instructions

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • In a large bowl, toss the sliced steak with olive oil, fajita seasoning, lime juice, salt, and pepper. Make sure the steak is evenly coated.
  • Add the sliced bell peppers and onions to the bowl and toss to combine with the steak mixture.
  • Spread the steak and vegetables in a single layer on the prepared baking sheet.
  • Bake for 20-25 minutes, or until the steak is cooked to your desired doneness and the vegetables are tender-crisp. Flip halfway through cooking.
  • Remove from oven and serve immediately with warm flour tortillas and your favorite toppings.

Notes

For extra flavor, marinate the steak for at least 30 minutes before cooking. You can also add other vegetables like mushrooms or zucchini.
