- Preheat oven to 375°F (190°C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, whisk together flour, cornmeal, baking powder, salt, and sugar.
- In a separate bowl, combine grated zucchini (squeezed dry), thawed corn, eggs, milk, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Stir in the cheddar cheese (if using).
- Pour the batter into the prepared pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool completely before cutting into bars.
Notes
These bars are best served warm. You can also add other vegetables, such as diced bell peppers or onions.
