  • 1 1/2 cups All-purpose flour
  • 1/2 cup Cornmeal
  • 2 teaspoons Baking powder
  • 1 teaspoon Salt
  • 1/4 cup Sugar
  • 2 cups Grated zucchini Squeeze out excess moisture
  • 1 cup Frozen corn Thawwed
  • 2 Eggs
  • 1 cup Milk
  • 1/2 cup Melted butter
  • 1 cup Shredded cheddar cheese Optional

  • Preheat oven to 375°F (190°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together flour, cornmeal, baking powder, salt, and sugar.
  • In a separate bowl, combine grated zucchini (squeezed dry), thawed corn, eggs, milk, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Stir in the cheddar cheese (if using).
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool completely before cutting into bars.

Notes

These bars are best served warm. You can also add other vegetables, such as diced bell peppers or onions.
