- Step 1: In a mixing bowl, combine the dark rum, brown sugar, and ground cinnamon. Stir until the sugar is completely dissolved.
- Step 2: Add the pineapple rings to the rum mixture, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour.
- Step 3: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the coconut milk, mixing until a smooth batter forms.
- Step 4: Heat vegetable oil in a deep skillet or frying pan over medium heat.
- Step 5: Remove the pineapple rings from the rum mixture, dip each ring into the batter, and carefully place into the hot oil. Fry until golden brown, about 2-3 minutes on each side.
- Step 6: Use a slotted spoon to remove the pineapple from the oil and drain on paper towels. Serve warm, optionally topped with whipped cream or vanilla ice cream.
Notes
Choose a ripe pineapple for better sweetness. Don’t overcrowd the pan while frying.
