- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: In a medium saucepan, combine orzo and vegetable broth. Bring to a boil, then reduce heat and simmer for 8-10 minutes until al dente. Drain any excess liquid.
- Step 3: In a large mixing bowl, combine cooked orzo, roasted red peppers, goat cheese, spinach, Parmesan cheese, minced garlic, oregano, salt, and pepper. Drizzle with olive oil and mix thoroughly.
- Step 4: Grease a baking dish and transfer the mixture, spreading it evenly.
- Step 5: Bake for 20-25 minutes until the top is golden and bubbly.
- Step 6: Let cool for a few minutes and garnish with fresh basil if desired before serving.
Notes
This dish can be made ahead of time and tastes even better the next day. Store leftovers in an airtight container for up to 3 days.
