Method
- Step 1: Preheat the oven to 450°F (232°C).
- Step 2: Mix together minced garlic, fresh rosemary, fresh thyme, olive oil, salt, and pepper to create an herb paste.
- Step 3: Rub the herb mixture all over the rib roast.
- Step 4: Place the rib roast on a rack in the roasting pan and roast for 20 minutes at high heat.
- Step 5: Reduce oven temperature to 325°F (163°C) and continue roasting for 1 to 1.5 hours.
- Step 6: Once desired temperature is reached, let the roast rest for 20-30 minutes.
- Step 7: While resting, prepare the creamy horseradish sauce by mixing sour cream, horseradish, Dijon mustard, lemon juice, salt, and pepper.
- Step 8: Carve the rib roast against the grain into thick slices and serve with the creamy horseradish sauce.
