Method
 

  1. Step 1: In a medium saucepan, combine the chopped rhubarb, water, and sugar. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar. Once boiling, reduce the heat to low and let it simmer for about 15 minutes, or until the rhubarb is soft and has broken down.
  2. Step 2: After simmering, remove the saucepan from heat. Using a fine mesh sieve, strain the mixture over a bowl to separate the liquid from the solids. Discard the solids, and allow the rhubarb syrup to cool to room temperature.
  3. Step 3: Once the syrup has cooled, stir in the rosewater and fresh lemon juice. Taste the mixture and adjust the sweetness or acidity as desired.
  4. Step 4: In a glass filled with ice cubes, pour the rhubarb mixture until the glass is about half full. Top off the glass with sparkling water. Gently stir to combine the ingredients without losing too much carbonation.
