  • 4 cups cubed stale bread any type, crusty artisan or sourdough preferred
  • 2 cups chopped rhubarb fresh recommended
  • 2 cups milk whole milk recommended
  • 3 large eggs
  • 1 cup granulated sugar adjust to sweetness preference
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raisins optional
  • 2 tablespoons butter melted

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, combine cubed stale bread and chopped rhubarb. Gently toss to distribute rhubarb evenly.
  3. Step 3: In a separate bowl, whisk together milk, eggs, sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Step 4: Pour the milk mixture over the bread and rhubarb. Using a spatula, gently fold until the bread is evenly soaked.
  5. Step 5: If using raisins, stir them into the mixture.
  6. Step 6: Grease a 9x13 inch baking dish with butter or cooking spray. Pour the pudding mixture into the prepared dish.
