- Step 1: Preheat the oven to 350°F (175°C).
- Step 2: In a large mixing bowl, combine cubed stale bread and chopped rhubarb. Gently toss to distribute rhubarb evenly.
- Step 3: In a separate bowl, whisk together milk, eggs, sugar, vanilla extract, cinnamon, and salt until well combined.
- Step 4: Pour the milk mixture over the bread and rhubarb. Using a spatula, gently fold until the bread is evenly soaked.
- Step 5: If using raisins, stir them into the mixture.
- Step 6: Grease a 9x13 inch baking dish with butter or cooking spray. Pour the pudding mixture into the prepared dish.
- Step 7: Drizzle melted butter over the top.
- Step 8: Bake for 40-45 minutes, or until set and golden brown.
- Step 9: Allow to cool slightly before serving.
Notes
Consider adding a tablespoon of lemon zest to enhance the tartness of the rhubarb.
