- Step 1: Preheat your oven to 350°F (175°C). Grease your baking dish with butter or cooking spray, or line it with parchment paper for easy removal.
- Step 2: In a medium bowl, combine the all-purpose flour, granulated sugar, softened butter, vanilla extract, and salt. Mix until it resembles coarse crumbs.
- Step 3: Press the crust mixture evenly into the bottom of your prepared baking dish. Bake for 15 minutes until lightly golden brown.
- Step 4: In a large bowl, combine the chopped rhubarb and 1 cup of granulated sugar. Let sit for about 10 minutes to release juices.
- Step 5: In another bowl, beat the softened cream cheese until smooth. Add the eggs, vanilla extract, all-purpose flour, and baking powder. Mix until well combined.
- Step 6: Gently fold the rhubarb mixture into the cream cheese mixture.
- Step 7: Pour the filling over the baked crust and spread evenly.
- Step 8: Bake for an additional 30-35 minutes until the filling is set and lightly browned on top.
- Step 9: Allow to cool completely in the pan on a cooling rack. Slice into bars and serve.
Notes
Store leftover bars in an airtight container in the refrigerator for up to one week. They can also be frozen for up to three months.
