- In a large bowl, combine the ground pork or chicken, chopped cabbage, shredded carrots, green onions, garlic, ginger, soy sauce, sesame oil, rice vinegar, sugar, salt, and pepper. Mix until well combined.
- Take a potsticker wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with a little water, fold it in half, and pinch the edges to seal. You can create pleats for a decorative touch if desired. Repeat with the remaining wrappers and filling.
- Heat a large skillet over medium-high heat and add a tablespoon of cooking oil. Once the oil is hot, place the potstickers in the skillet, making sure not to overcrowd them.
- Fry the potstickers for about 2-3 minutes until the bottoms are golden brown. Carefully add 1/4 cup of water to the skillet and cover immediately. Allow the potstickers to steam for about 5-6 minutes, or until the water has evaporated and the potstickers are cooked through.
- While the potstickers are cooking, prepare the sesame sauce by whisking together soy sauce, sesame oil, rice vinegar, sesame seeds, honey or sugar (if using), and red pepper flakes (if using) in a small bowl.
- Once the potstickers are done, remove them from the skillet and serve hot with the sesame sauce for dipping.
Notes
Feel free to customize the filling with your favorite vegetables or protein. You can also make the sesame sauce ahead of time and refrigerate it.
