  • 1 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1/4 teaspoon Salt
  • 1 cup Finely chopped pecans
  • 1/2 cup Fruit preserves (raspberry or apricot)
  • Powdered sugar for dusting

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes.
  3. Mix in the vanilla extract until well combined.
  4. Gradually add the all-purpose flour and salt to the butter mixture, mixing until just combined.
  5. Fold in the chopped pecans until evenly distributed throughout the dough.
  6. Reserve about 1 cup of the mixture for the topping, then press the remaining dough evenly into the bottom of the prepared baking pan.
  7. Spread the fruit preserves evenly over the layer of dough in the pan.
  8. Crumble the reserved dough over the top of the fruit preserves to create a crumbly topping.
  9. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  10. Remove from the oven and allow to cool in the pan for at least 10 minutes before transferring to a wire rack to cool completely.
  11. Once cooled, dust with powdered sugar before cutting into bars.
