Ingredients
  

For the Oven Roasted Potatoes
  • 2 lb potatoes Yukon Gold or red potatoes recommended
  • 3 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried rosemary or fresh, chopped
  • 1 tsp dried thyme or fresh, chopped

  • fresh parsley for garnish

Method
 

  1. Step 1: Preheat the oven to 425°F (220°C).
  2. Step 2: Wash and scrub the potatoes thoroughly. Cut the potatoes into uniform 1-inch cubes.
  3. Step 3: In a large bowl, combine the olive oil, salt, black pepper, garlic powder, rosemary, and thyme. Mix well.
  4. Step 4: Add the cubed potatoes to the bowl and toss until evenly coated.
  5. Step 5: Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
  6. Step 6: Roast the potatoes for 25-30 minutes, flipping halfway through.
  7. Step 7: Once roasted, remove from the oven and let cool slightly. Garnish with fresh parsley if desired.

Notes

For extra crispiness, soak cubed potatoes in water for 30 minutes before roasting. Store leftovers in an airtight container in the fridge for up to 3-5 days.
