- Step 1: In a large mixing bowl, combine 1 cup of creamy peanut butter and 1/2 cup of softened unsalted butter. Using a spatula or wooden spoon, mix them together until the mixture is smooth and creamy.
- Step 2: Gradually add 1 cup of powdered sugar and 1 1/2 cups of graham cracker crumbs to the peanut butter and butter mixture. Stir until fully combined.
- Step 3: Press the mixture evenly into the bottom of an 8x8-inch baking dish. Make sure to pack it down firmly using your hands or a spatula.
- Step 4: In a microwave-safe bowl, combine 1 cup of semisweet chocolate chips and 2 tablespoons of coconut oil. Microwave in 30-second intervals, stirring between each interval until the chocolate is melted and smooth.
- Step 5: Carefully pour the melted chocolate over the peanut butter layer in the baking dish and use a spatula to spread it evenly across the top.
- Step 6: Cover the baking dish with plastic wrap or foil and chill in the refrigerator for at least 2 hours, or until the bars are firm.
- Step 7: After the bars have set, remove them from the refrigerator and cut them into squares using a sharp knife or pizza cutter.
Notes
These bars can be frozen for up to three months. When stored in an airtight container, they can last in the refrigerator for up to one week.
