- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, cloves, and nutmeg.
- In a separate bowl, cream together granulated sugar and brown sugar with the oil until light and fluffy. Beat in eggs one at a time, then stir in pumpkin puree and vanilla.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool completely in the pan before frosting.
- For the frosting: Beat together cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and salt, beating until light and fluffy.
- Frost the cooled cake and enjoy!
Notes
For a richer flavor, use brown butter in the frosting. You can also add chopped pecans or walnuts to the batter for added texture.
