Ingredients
  

Crust Ingredients
  • 1.5 cups All-purpose flour
  • 0.5 teaspoon Salt
  • 0.5 cups (1 stick) Cold unsalted butter cut into cubes
  • 0.25 cups Ice water
Filling Ingredients
  • 4 medium Apples (Granny Smith, Honeycrisp, or mix) peeled, cored, and thinly sliced
  • 0.5 cups Granulated sugar
  • 0.25 cups Packed light brown sugar
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground allspice
  • 2 tablespoons Lemon juice
  • 1 tablespoon Butter cut into small pieces

Equipment

Method
 

Instructions
  1. Make the crust: Whisk together flour and salt. Cut in cold butter until crumbly. Gradually add ice water, mixing until dough forms. Refrigerate for at least 30 minutes.
  2. Make the filling: In a bowl, combine sliced apples, sugars, flour, cinnamon, nutmeg, allspice, and lemon juice. Toss gently.
  3. Preheat oven to 375°F (190°C).
  4. Roll out dough to ⅛ inch thickness. Cut out 4-inch circles and press into mini muffin tin.
  5. Fill each crust with apple filling. Dot with small pieces of butter.
  6. Bake for 20-25 minutes, or until golden brown and bubbly.
  7. Cool in muffin tin for a few minutes before transferring to a wire rack to cool completely.
  8. Serve warm or at room temperature.

Notes

For a richer flavor, use a combination of sweet and tart apples. You can also add a sprinkle of coarse sugar before baking for extra crunch. Store leftover pies in an airtight container at room temperature for up to 3 days.
