- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the chopped kimchi, gochujang, soy sauce, sesame oil, and honey. Mix well until all ingredients are evenly incorporated.
- Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Place the salmon fillets on the prepared baking sheet, skin-side down.
- Spoon the kimchi mixture evenly over each salmon fillet, ensuring they are well covered.
- Bake the salmon in the preheated oven for about 15-20 minutes, or until the salmon flakes easily with a fork and is cooked through.
- While the salmon is baking, prepare the cooked rice according to package instructions.
- Once the salmon is done, remove it from the oven. Sprinkle with sliced green onions and sesame seeds for garnish.
- Serve the kimchi baked salmon hot over a bed of cooked rice. Garnish with fresh cilantro if desired.
