  • 1 pound Pasta (rotini, penne, or farfalle)
  • 1 cup Italian Dressing (or to taste)
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1/2 cup Red Onion thinly sliced
  • 1/2 cup Black Olives sliced
  • 1/2 cup Shredded Mozzarella Cheese optional
  • 1/4 cup Grated Parmesan Cheese optional
  • to taste Salt and Pepper

  • Cook pasta according to package directions. Drain well and rinse with cold water to stop the cooking process.
  • In a large bowl, combine the cooked and cooled pasta, Italian dressing, cherry tomatoes, cucumber, red onion, and black olives.
  • Gently toss to combine all ingredients thoroughly.
  • If using, stir in the mozzarella and Parmesan cheese.
  • Season with salt and pepper to taste.
  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. For best results, chill for 2-4 hours or overnight.
  • Serve chilled and enjoy!

Notes

For a spicier kick, add a pinch of red pepper flakes. You can also substitute other vegetables like bell peppers or broccoli florets. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
