Ingredients

  • 8 oz pasta such as rotini or penne
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Method
 

  1. Step 1: Start by cooking the pasta according to the package instructions. Once it's al dente, drain it and rinse under cold water to cool it down quickly.
  2. Step 2: In a large bowl, combine the cooled pasta with cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.
  3. Step 3: In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper until well combined.
  4. Step 4: Pour the dressing over the pasta salad and toss gently to mix everything evenly.
  5. Step 5: Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together beautifully.

Notes

This pasta salad keeps well in the refrigerator for about 3 to 5 days. Consider adding the feta and dressing just before serving to keep everything fresh.
