- Start by peeling the ginger using a vegetable peeler or the edge of a spoon. Cut the ginger into small pieces to make blending easier.
- Squeeze the juice from the lemon and set it aside.
- In a blender, combine the ginger pieces and water. Blend on high speed until the ginger is finely pureed and well combined with the water.
- Place a fine mesh strainer or cheesecloth over a bowl or measuring cup. Pour the ginger puree through the strainer to extract the juice, pressing down with a spoon to get as much liquid as possible.
- Once you have the ginger juice, mix in the fresh lemon juice and honey (if using) until well combined.
- For an extra kick, add a pinch of cayenne pepper and stir well.
- Pour the ginger shots into small shot glasses or a sealed container for storage.
- Serve immediately or refrigerate for up to one week. Shake well before consuming.
Notes
Feel free to adjust the sweetness by adding more honey or omit it for a sugar-free version.
