- Step 1: Preheat the oven to 350°F (175°C) and prepare your muffin tin by lining it with paper liners or greasing it.
- Step 2: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, ginger, and nutmeg.
- Step 3: In another bowl, cream the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the buttermilk and vanilla until just combined.
- Step 4: Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined.
- Step 5: Prepare the streusel topping by mixing the flour, brown sugar, ginger, and nutmeg in a small bowl. Cut in the cold butter until crumbly.
- Step 6: Fill the muffin cups about 2/3 full with batter and sprinkle the streusel topping generously over each muffin.
- Step 7: Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Allow to cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
Notes
These muffins freeze well; just wrap them tightly and store in an airtight container.
