- Preheat oven to 400°F (200°C).
- Toss potatoes with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and golden.
- While potatoes roast, heat remaining olive oil in a large skillet over medium-high heat.
- Add beef cubes and cook, stirring occasionally, until browned on all sides (5-7 minutes).
- Reduce heat to medium-low. Add butter to skillet and melt completely. Stir in minced garlic and thyme; cook 1-2 minutes until fragrant.
- Add roasted potatoes to the skillet. Toss gently to coat with the garlic butter sauce. Cook 2-3 minutes to allow potatoes to absorb flavors.
- Stir in chopped parsley. Serve immediately.
Notes
For extra flavor, marinate the beef cubes in a mixture of garlic, thyme, and olive oil for at least 30 minutes before cooking. You can also add other vegetables like chopped onions or bell peppers to the skillet with the potatoes.
