Ingredients
  

Cookie Dough

  • 2 cups All-purpose Flour
  • 1/2 cup Granulated Sugar
  • 1/2 cup Unsalted Butter softened
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract

Frosting

  • 4 ounces Cream Cheese softened
  • 2 cups Powdered Sugar
  • 2 tablespoons Butter softened

Topping

  • 1 cup Assorted Fresh Fruits such as strawberries, blueberries, kiwi, and mandarin oranges, sliced

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract.
  • Gradually add the flour, mixing until just combined. Do not overmix.
  • Drop by rounded tablespoons onto the prepared baking sheet, leaving some space between each cookie.
  • Bake for 10-12 minutes, or until edges are lightly golden brown.
  • Let the cookies cool completely on a wire rack.
  • While cookies cool, prepare the frosting: Beat together cream cheese, powdered sugar, and butter until smooth and creamy.
  • Spread frosting evenly over the cooled cookies. Arrange the sliced fruit on top.

Notes

For best results, use fresh, ripe fruit. You can also add a sprinkle of chopped nuts or a drizzle of chocolate sauce for extra flavor.
