- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Gradually add the flour, mixing until just combined. Do not overmix.
- Drop by rounded tablespoons onto the prepared baking sheet, leaving some space between each cookie.
- Bake for 10-12 minutes, or until edges are lightly golden brown.
- Let the cookies cool completely on a wire rack.
- While cookies cool, prepare the frosting: Beat together cream cheese, powdered sugar, and butter until smooth and creamy.
- Spread frosting evenly over the cooled cookies. Arrange the sliced fruit on top.
Notes
For best results, use fresh, ripe fruit. You can also add a sprinkle of chopped nuts or a drizzle of chocolate sauce for extra flavor.
