  • 3 Ripe Peaches peeled and diced
  • 0.5 cup Red Onion finely chopped
  • 1 Jalapeño Pepper seeded and minced (optional, adjust to taste)
  • 0.5 cup Cilantro chopped
  • 0.25 cup Lime Juice freshly squeezed
  • 2 tablespoons Honey or Agave Nectar adjust to taste
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black Pepper freshly ground

  • In a medium bowl, gently combine the diced peaches, red onion, jalapeño (if using), and cilantro.
  • In a small bowl, whisk together the lime juice, honey (or agave), salt, and pepper.
  • Pour the lime juice mixture over the peach mixture and stir gently to combine.
  • Taste and adjust seasonings as needed. Add more lime juice for tartness, or more honey for sweetness.
  • Let the salsa sit for at least 15 minutes to allow the flavors to meld. This step is optional but recommended.
  • Serve immediately with tortilla chips, as a topping for grilled chicken or fish, or as a topping for tacos or burritos.

Notes

For a smoother salsa, you can briefly pulse the ingredients in a food processor. Store leftovers in an airtight container in the refrigerator for up to 2 days.
