Crust Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 teaspoon Salt
  • 0.5 cups (1 stick) Unsalted butter, chilled cut into cubes
  • 0.25 cups Packed light brown sugar
  • 0.25 cups Ice water

Filling Ingredients

  • 1 cup Packed light brown sugar
  • 0.5 cup Granulated sugar
  • 0.5 cup Light corn syrup
  • 0.25 cup Unsalted butter, melted
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 1.5 cups Pecan halves

  • Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides.
  • Whisk together flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • Stir in the brown sugar. Gradually add ice water, mixing until the dough just comes together. Do not overmix.
  • Press the dough evenly into the bottom of the prepared pan.
  • In a large bowl, whisk together brown sugar, granulated sugar, corn syrup, melted butter, eggs, and vanilla extract until well combined.
  • Stir in the pecan halves. Pour the pecan filling evenly over the crust.
  • Bake for 30-35 minutes, or until the filling is set and the crust is lightly golden brown.
  • Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into bars and serve.

Notes

For a richer flavor, toast the pecans before adding them to the filling. Store leftover bars in an airtight container at room temperature for up to 3 days.
