- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Grease and flour your 9x5-inch loaf pan.
- Step 3: In a large mixing bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix thoroughly.
- Step 4: In a separate medium bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, and salt.
- Step 5: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in nuts if using.
- Step 6: Pour the batter into the prepared loaf pan and smooth the top.
- Step 7: Bake for 50-60 minutes, checking for doneness with a toothpick.
- Step 8: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
