- Step 1: Preheat the oven to 350°F (175°C) and grease your 9x5-inch loaf pan.
- Step 2: Grate your zucchini and squeeze out excess moisture.
- Step 3: In a large bowl, mix the grated zucchini, honey, vegetable oil, eggs, and vanilla extract until well blended.
- Step 4: In another bowl, whisk together the whole wheat flour, all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.
- Step 5: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Step 6: Fold in nuts or raisins if desired.
- Step 7: Pour the batter into the prepared loaf pan and smooth the top.
- Step 8: Bake for 50-60 minutes, or until a toothpick comes out clean.
- Step 9: Allow to cool for 10 minutes before transferring to a wire rack to cool completely.

Store your bread in an airtight container at room temperature for up to 3 days. For longer storage, wrap it tightly in plastic wrap and freeze for up to 3 months.
