  • 1 bag Doritos Nacho Cheese or Cool Ranch
  • 1 lb ground beef or chicken, turkey, or a plant-based alternative
  • 1 packet taco seasoning or homemade
  • 1 can black beans 15 oz, rinsed and drained
  • 1 cup corn canned or frozen
  • 1 cup diced tomatoes fresh or canned
  • 1 cup shredded lettuce iceberg or romaine
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup diced onions optional
  • 1/2 cup sliced black olives optional
  • 1 cup sour cream or Greek yogurt
  • 1 cup salsa mild, medium, or hot

Method
 

  1. Step 1: In a large skillet, heat over medium heat. Add the ground beef and cook until browned, stirring occasionally. This should take about 5-7 minutes. Drain any excess fat.
  2. Step 2: Once the beef is browned, sprinkle the taco seasoning over the meat. Follow the packet instructions, usually adding a specific amount of water and letting it simmer.
  3. Step 3: In a large mixing bowl, combine the cooked beef, black beans, corn, diced tomatoes, diced onions, and black olives. Gently stir to mix.
  4. Step 4: Crush the Doritos into bite-sized pieces and add them to the mixture.
  5. Step 5: Layer shredded lettuce and sprinkle cheese on top. Serve immediately or allow to sit for a few minutes.
