- Step 1: Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
- Step 2: In a large mixing bowl, combine the grated zucchini, granulated sugar, vegetable oil, eggs, and vanilla extract. Whisk until well blended.
- Step 3: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Gradually add to the wet mixture, stirring until just combined.
- Step 4: Fold in the chocolate chips using a rubber spatula. Pour the batter into the prepared loaf pan.
- Step 5: Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
This bread stores well for up to 3 days at room temperature. For longer storage, freeze for up to 3 months.
