  • 1 medium Dragonfruit, peeled and diced
  • 2 stalks Fresh lemongrass, chopped
  • 1 cup Coconut water
  • 1/2 cup Fresh lime juice
  • 1/4 cup Agave syrup (or honey)
  • 1 cup Vodka (optional)
  • Ice cubes As needed
  • Fresh mint leaves for garnish As needed
  • Lime slices for garnish As needed

Method
 

Instructions
  1. Chop the lemongrass stalks into small pieces to release their flavors.
  2. Combine the chopped lemongrass and coconut water in a small saucepan. Heat over medium heat until it just begins to simmer. Remove from heat and let steep for about 15 minutes.
  3. While the lemongrass is steeping, peel and dice the dragonfruit into small cubes.
  4. Strain the lemongrass mixture through a fine mesh sieve into a large pitcher to remove the lemongrass pieces.
  5. Add fresh lime juice and agave syrup (or honey) to the strained coconut water. Stir well until the sweetener is fully dissolved.
  6. If using vodka, pour it into the mixture and stir to combine.
  7. Fill serving glasses with ice cubes and divide the dragonfruit evenly among the glasses.
  8. Pour the lemongrass and coconut mixture over the dragonfruit in each glass.
  9. Garnish with fresh mint leaves and a slice of lime. Serve immediately and enjoy your refreshing Dragonfruit Lemongrass Cocktail!

Notes

For a non-alcoholic version, simply omit the vodka. You can also experiment with different sweeteners or add more fresh herbs for extra flavor.
