- Chop the lemongrass stalks into small pieces to release their flavors.
- Combine the chopped lemongrass and coconut water in a small saucepan. Heat over medium heat until it just begins to simmer. Remove from heat and let steep for about 15 minutes.
- While the lemongrass is steeping, peel and dice the dragonfruit into small cubes.
- Strain the lemongrass mixture through a fine mesh sieve into a large pitcher to remove the lemongrass pieces.
- Add fresh lime juice and agave syrup (or honey) to the strained coconut water. Stir well until the sweetener is fully dissolved.
- If using vodka, pour it into the mixture and stir to combine.
- Fill serving glasses with ice cubes and divide the dragonfruit evenly among the glasses.
- Pour the lemongrass and coconut mixture over the dragonfruit in each glass.
- Garnish with fresh mint leaves and a slice of lime. Serve immediately and enjoy your refreshing Dragonfruit Lemongrass Cocktail!
Notes
For a non-alcoholic version, simply omit the vodka. You can also experiment with different sweeteners or add more fresh herbs for extra flavor.
