Method
- Step 1: Begin by bringing a large pot of salted water to a boil. Once boiling, add the rotini pasta and cook according to the package instructions until al dente. This typically takes about 8-10 minutes.
- Step 2: Once the pasta is cooked, drain it in a colander and rinse it under cold water to stop the cooking process.
- Step 3: While the pasta is cooling, prepare the other ingredients by cooking and crumbling the bacon, dicing the dill pickles, and chopping the red onion and celery.
- Step 4: In a large mixing bowl, combine the cooked and cooled pasta, crumbled bacon, diced dill pickles, chopped red onion, and diced celery. Toss gently.
- Step 5: In a separate bowl, mix the mayonnaise, Dijon mustard, and pickle juice. Season with salt and pepper to taste. Whisk until smooth.
- Step 6: Pour the dressing over the pasta mixture and toss until well coated.
- Step 7: Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
- Step 8: Before serving, give the salad a quick toss and garnish with fresh dill if desired.
Notes
This pasta salad can be made ahead of time and stored in the refrigerator for about 3-5 days.
