- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
- In a large bowl, whisk together oil, eggs, sugar, and vanilla extract.
- In a separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the grated zucchini.
- Fill each muffin cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a sweeter muffin, add 1/4 cup of chocolate chips or chopped nuts. You can also use different spices like nutmeg or cardamom.
