Method
- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Grease an 8-inch square baking dish with butter or non-stick spray.
- Step 3: In a mixing bowl, combine 1 cup of flour, 1/2 cup of granulated sugar, softened butter, 1/4 teaspoon of salt, and 1/4 teaspoon of baking powder. Mix until the mixture resembles coarse crumbs.
- Step 4: Evenly press the crust mixture into the bottom of your prepared baking dish. Bake the crust for 15 minutes, or until it turns lightly golden.
- Step 5: In another bowl, whisk together the lemon juice, eggs, 1 cup of sugar, 1/4 cup of flour, lemon zest, and 1/4 teaspoon of salt until smooth.
- Step 6: Gently stir in the chopped rhubarb into the lemon mixture.
- Step 7: Carefully pour the rhubarb and lemon filling over the pre-baked crust, spreading it out evenly.
- Step 8: Return the dish to the oven and bake for an additional 25-30 minutes until the filling is set and lightly browned on top.
- Step 9: Allow the bars to cool completely in the baking dish on a cooling rack. Once cooled, cut them into squares.
- Step 10: Before serving, dust the top of the bars with powdered sugar.
Notes
These bars can be stored in an airtight container in the refrigerator for up to a week. They can also be frozen for up to three months—just make sure to wrap them well!
