Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Grease an 8-inch square baking dish with butter or non-stick spray.
  3. Step 3: In a mixing bowl, combine 1 cup of flour, 1/2 cup of granulated sugar, softened butter, 1/4 teaspoon of salt, and 1/4 teaspoon of baking powder. Mix until the mixture resembles coarse crumbs.
  4. Step 4: Evenly press the crust mixture into the bottom of your prepared baking dish. Bake the crust for 15 minutes, or until it turns lightly golden.
  5. Step 5: In another bowl, whisk together the lemon juice, eggs, 1 cup of sugar, 1/4 cup of flour, lemon zest, and 1/4 teaspoon of salt until smooth.
  6. Step 6: Gently stir in the chopped rhubarb into the lemon mixture.
  7. Step 7: Carefully pour the rhubarb and lemon filling over the pre-baked crust, spreading it out evenly.
  8. Step 8: Return the dish to the oven and bake for an additional 25-30 minutes until the filling is set and lightly browned on top.
