Method
- Step 1: In a large mixing bowl, combine the creamy peanut butter and softened unsalted butter. Use a spatula or an electric mixer to mix until the mixture is smooth and creamy.
- Step 2: Gradually add in the powdered sugar and vanilla extract. Mix until everything is fully incorporated.
- Step 3: Stir in the graham cracker crumbs until the mixture is well combined.
- Step 4: Prepare your greased 9x9-inch baking dish by pressing the peanut butter mixture evenly into the bottom.
- Step 5: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
- Step 6: Pour the melted chocolate over the peanut butter layer and spread it evenly using a spatula.
- Step 7: Sprinkle sea salt on top of the chocolate layer to taste.
- Step 8: Place the baking dish in the refrigerator for at least 2 hours, or until the bars are set.
- Step 9: Once set, remove the bars from the fridge. Using a sharp knife or pizza cutter, cut them into squares or rectangles.
Notes
Store the bars in an airtight container in the refrigerator for up to a week. You can also freeze them for longer storage—just ensure they are well-wrapped.
