Ingredients

For the Salad
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup shredded cheddar cheese
  • 1 can black beans rinsed and drained
  • 1 cup corn canned or frozen
  • 1 cup Doritos crushed
  • 1 cup sour cream
  • 1 cup salsa
Optional Toppings
  • sliced black olives
  • diced avocado
  • jalapeƱos

Equipment

  • Skillet
  • Large bowl
  • Measuring cups and spoons
  • Chopping Knife
  • Serving Spoon
  • Can opener

Method

  1. Step 1: In a skillet over medium heat, add the ground beef. Use a wooden spoon to break it apart as it cooks. Cook until the beef is browned, which usually takes about 6-8 minutes. Drain any excess fat to keep the salad from being greasy.
  2. Step 2: Once the beef is cooked, sprinkle in the taco seasoning. Add 1 cup of water to the skillet and stir well. Bring the mixture to a simmer and allow it to cook for about 5 minutes, or until the sauce has thickened slightly.
  3. Step 3: While the beef is cooking, take a large bowl and add the chopped romaine lettuce, halved cherry tomatoes, shredded cheddar cheese, rinsed black beans, and corn. Toss everything together.
  4. Step 4: Once the beef mixture is ready, carefully add it to the bowl with the salad ingredients. Use tongs or a large spoon to toss everything together gently.
  5. Step 5: Just before serving, sprinkle the crushed Doritos over the salad. Toss lightly to ensure they are incorporated without becoming soggy.
  6. Step 6: Drizzle the sour cream and salsa over the salad. Toss lightly again to coat everything in the dressing.
  7. Step 7: If desired, top your salad with optional ingredients like sliced black olives, diced avocado, and jalapeƱos for an extra kick of flavor. Serve immediately.

Notes

To keep the Doritos crunchy, consider adding them right before serving. If you anticipate leftovers, serve the salad without the chips and add them individually to each serving.
