- Step 1: Preheat the oven to 425°F (220°C).
- Step 2: Place baby carrots in a pot of boiling water. Cook for about 10 minutes or until tender but not mushy. Drain and transfer to a baking sheet lined with parchment paper.
- Step 3: Gently smash each carrot with a fork or the bottom of a glass until flattened.
- Step 4: Drizzle olive oil over smashed carrots. Sprinkle garlic powder, paprika, salt, and pepper. Toss gently to coat.
- Step 5: Bake in the preheated oven for 20-25 minutes until golden brown and crispy.
- Step 6: Allow to cool slightly. Garnish with fresh parsley if desired before serving.
Notes
For extra crispiness, consider broiling the carrots for the last 2-3 minutes of baking.
