  • 4 medium Potatoes diced
  • 200 g Chorizo diced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Garlic Powder
  • to taste Salt
  • to taste Pepper
  • to taste Fresh Parsley chopped, for garnish

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced potatoes, olive oil, smoked paprika, garlic powder, salt, and pepper. Toss until the potatoes are evenly coated.
  3. Spread the seasoned potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25 minutes, or until the potatoes begin to soften.
  5. While the potatoes are roasting, heat a skillet over medium heat and add the diced chorizo. Cook for about 5 minutes, or until the chorizo is crispy and has released its oils.
  6. Remove the potatoes from the oven after 25 minutes. Add the crispy chorizo to the baking sheet and toss everything together.
  7. Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the potatoes are golden brown and crispy.
  8. Once done, remove from the oven and let cool slightly. Garnish with fresh parsley before serving.

Notes

For a spicier version, add some red pepper flakes or serve with a spicy dipping sauce.
