- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the diced potatoes, olive oil, smoked paprika, garlic powder, salt, and pepper. Toss until the potatoes are evenly coated.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25 minutes, or until the potatoes begin to soften.
- While the potatoes are roasting, heat a skillet over medium heat and add the diced chorizo. Cook for about 5 minutes, or until the chorizo is crispy and has released its oils.
- Remove the potatoes from the oven after 25 minutes. Add the crispy chorizo to the baking sheet and toss everything together.
- Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the potatoes are golden brown and crispy.
- Once done, remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
Notes
For a spicier version, add some red pepper flakes or serve with a spicy dipping sauce.
