- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more, until fragrant.
- Stir in crushed tomatoes, spinach, chicken broth, heavy cream, salt, and pepper. Bring to a simmer and cook for 5-7 minutes, or until sauce has thickened slightly.
- Add cooked chicken and pasta to the sauce. Stir to combine and heat through.
- Stir in Parmesan cheese. Serve immediately, garnished with fresh basil leaves, if desired.
Notes
For a richer flavor, use a combination of chicken broth and white wine. You can also add other vegetables like mushrooms or bell peppers to the sauce. Leftovers can be stored in the refrigerator for up to 3 days.
