  • 8 ounces Cream Cheese softened
  • 4 ounces Pimentos jar, drained and chopped
  • 0.25 cup Mayonnaise
  • 2 tablespoons Buttermilk (or milk)
  • 1 teaspoon Yellow Mustard
  • 1 teaspoon Garlic Powder
  • 0.25 teaspoon Onion Powder
  • 0.25 teaspoon Cayenne Pepper optional
  • to taste Salt and Freshly Ground Black Pepper

  • In a medium bowl, combine the shredded cheddar cheese and softened cream cheese. Mix well until evenly combined.
  • Add the drained and chopped pimentos, mayonnaise, buttermilk (or milk), yellow mustard, garlic powder, onion powder, and cayenne pepper (if using).
  • Gently mix all ingredients together until thoroughly combined and creamy. Avoid overmixing, as this can make the pimento cheese too thin.
  • Season with salt and freshly ground black pepper to taste. Start with a small amount and add more as needed. Taste and adjust seasonings as desired.
  • Refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional but recommended for the best flavor.
  • Serve chilled with crackers, bread, vegetables, or as a sandwich spread. Enjoy!

For a smoother pimento cheese, you can briefly pulse the mixture in a food processor. Feel free to experiment with different types of cheese or add-ins like chopped jalapeƱos for extra flavor.
