- Cook pasta according to package directions. Drain and rinse with cold water.
- While pasta cooks, combine diced cucumber and red onion in a large bowl.
- In a separate bowl, whisk together mayonnaise, Greek yogurt, vinegar, dill, parsley, Dijon mustard, salt, and pepper until smooth.
- Add the cooled pasta to the bowl with cucumber and red onion.
- Pour dressing over the pasta and vegetables.
- Gently toss to combine.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled and garnish with extra dill or parsley, if desired.
Notes
For a richer flavor, use full-fat Greek yogurt and mayonnaise. You can add other vegetables like bell peppers or cherry tomatoes. To make it vegan, substitute vegan mayonnaise and yogurt.
