  • 1 medium head Cauliflower Cut into florets
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 2 cups Milk
  • 1 1/2 cups Cheddar cheese Grated
  • 1/2 cup Gruyere cheese Grated
  • 1/4 teaspoon Nutmeg Ground
  • to taste Salt and pepper
  • 1/4 cup Breadcrumbs Optional, for topping

  • Preheat oven to 375°F (190°C).
  • Steam or boil cauliflower florets until tender-crisp, about 8-10 minutes.
  • In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  • Gradually whisk in milk until smooth and thickened. Stir in nutmeg, salt, and pepper.
  • Stir in the grated cheddar and Gruyere cheeses until melted and creamy.
  • Add the cooked cauliflower to the cheese sauce and stir to coat.
  • Pour the mixture into a baking dish. Sprinkle with breadcrumbs (optional).
  • Bake for 25-30 minutes, or until golden brown and bubbly.

Notes

For a spicier kick, add a pinch of cayenne pepper to the cheese sauce. You can also substitute other cheeses, such as Gouda or Fontina.
