Instructions
- Preheat oven to 375°F (190°C).
- Steam or boil cauliflower florets until tender-crisp, about 8-10 minutes.
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth and thickened. Stir in nutmeg, salt, and pepper.
- Stir in the grated cheddar and Gruyere cheeses until melted and creamy.
- Add the cooked cauliflower to the cheese sauce and stir to coat.
- Pour the mixture into a baking dish. Sprinkle with breadcrumbs (optional).
- Bake for 25-30 minutes, or until golden brown and bubbly.
Notes
For a spicier kick, add a pinch of cayenne pepper to the cheese sauce. You can also substitute other cheeses, such as Gouda or Fontina.
