  • 1 pound Rotini pasta
  • 1 pint Cherry or grape tomatoes Halved
  • 8 ounces Fresh mozzarella balls Halved or quartered if large
  • 1/2 cup Fresh basil leaves Roughly chopped
  • 1/4 cup Grated Parmesan cheese
  • 1/2 cup Olive oil
  • 1/4 cup Balsamic vinegar
  • 2 cloves Garlic Minced
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

  • Cook pasta according to package directions. Drain and rinse with cold water.
  • While pasta cooks, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper in a large bowl.
  • Add the cooked pasta to the bowl with the dressing and toss gently to coat.
  • Add the halved tomatoes, mozzarella balls, and chopped basil to the pasta. Gently toss to combine.
  • Stir in the grated Parmesan cheese.
  • Taste and adjust seasoning as needed. Add more salt, pepper, balsamic vinegar, or olive oil to your preference.
  • Serve immediately or chill for at least 30 minutes to allow flavors to meld.

Notes

For a richer flavor, use fresh, high-quality mozzarella. You can also add other vegetables like bell peppers or cucumbers. Consider adding a pinch of red pepper flakes for a touch of heat.
