  • 1 pound Rotini pasta
  • 1 pint Cherry or grape tomatoes Halved
  • 8 ounces Fresh mozzarella balls Halved or quartered if large
  • 1/2 cup Fresh basil leaves Roughly chopped
  • 1/4 cup Grated Parmesan cheese
  • 1/2 cup Olive oil
  • 1/4 cup Balsamic vinegar
  • 2 cloves Garlic Minced
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Instructions
  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. While pasta cooks, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper in a large bowl.
  3. Add the cooked pasta to the bowl with the dressing and toss gently to coat.
  4. Add the halved tomatoes, mozzarella balls, and chopped basil to the pasta. Gently toss to combine.
  5. Stir in the grated Parmesan cheese.
  6. Taste and adjust seasoning as needed. Add more salt, pepper, balsamic vinegar, or olive oil to your preference.
  7. Serve immediately or chill for at least 30 minutes to allow flavors to meld.

Notes

For a richer flavor, use fresh, high-quality mozzarella. You can also add other vegetables like bell peppers or cucumbers. Consider adding a pinch of red pepper flakes for a touch of heat.
