  • 1 lb Boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tbsp Olive oil
  • 1/2 cup Onion chopped
  • 1 Green bell pepper chopped
  • 1 Red bell pepper chopped
  • 2 cloves Garlic minced
  • 1 tbsp Cajun seasoning or more, to taste
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 cup Heavy cream
  • 1/2 cup Chicken broth
  • 1/4 cup Parmesan cheese grated
  • 1/4 cup Fresh parsley chopped
  • 8 oz Pasta penne, rotini, or your favorite shape

  • Cook pasta according to package directions. Drain and set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  • Add onion and bell peppers to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  • Stir in Cajun seasoning, salt, and pepper. Cook for 1 minute, stirring constantly.
  • Pour in heavy cream and chicken broth. Bring to a simmer and cook until slightly thickened, about 2-3 minutes.
  • Add cooked chicken and pasta to the skillet. Stir to combine.
  • Stir in Parmesan cheese and parsley. Cook for 1 minute more, or until cheese is melted and sauce is heated through.
  • Serve immediately. Enjoy!

Notes

For a spicier dish, add more Cajun seasoning. You can also add other vegetables, such as mushrooms or zucchini. Leftovers can be stored in the refrigerator for up to 3 days.
