- In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the powdered sugar, beating on low speed until just combined.
- Stir in the vanilla and peppermint extracts. Add a few drops of green food coloring, if desired, and mix until evenly distributed.
- Taste and add more peppermint extract if needed.
- Roll the mixture into small balls (approximately 1 inch in diameter) or use a spoon to drop small mounds onto wax paper or parchment paper. If rolling into balls, roll them in crushed candy canes.
- Refrigerate the mints for at least 30 minutes, or until firm.
- Serve chilled and enjoy!
Notes
Store leftover mints in an airtight container in the refrigerator for up to a week. For a richer peppermint flavor, use white chocolate chips instead of crushed candy canes. You can also add other extracts for variation, such as almond or orange.
