  • 1 cup Creamy Peanut Butter
  • 1 cup Granulated Sugar
  • 0.5 cup Packed Light Brown Sugar
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 2.25 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 0.5 teaspoon Salt

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the peanut butter, granulated sugar, and brown sugar until smooth and creamy.
  • Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Roll the dough into 1-inch balls. Place them about 2 inches apart on the prepared baking sheets.
  • Use a fork to create a criss-cross pattern on top of each cookie.
  • Bake for 8-10 minutes, or until the edges are lightly golden brown. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, add a pinch of cinnamon or a teaspoon of chocolate chips to the dough. Store cookies in an airtight container at room temperature for up to a week.
