Method
 

  1. Step 1: In your blender, combine 1 cup rolled oats and 4 cups water. Blend on high speed until the mixture is smooth, about 30-45 seconds.
  2. Step 2: Pour the blended mixture through a nut milk bag or fine mesh strainer into a bowl or pitcher. Use a spatula to press down on the pulp to extract as much liquid as possible.
  3. Step 3: In a saucepan over medium heat, combine the strained oat milk, 1/2 cup pumpkin puree, 1 teaspoon cinnamon, 1/2 teaspoon vanilla extract, 1-2 tablespoons maple syrup (if using), and a pinch of salt. Stir continuously to blend all the ingredients well.
  4. Step 4: Keep stirring until the mixture is heated through and all ingredients are well combined, about 5-7 minutes. Avoid boiling the mixture to prevent any separation.
  5. Step 5: Once heated, remove the saucepan from heat and allow the mixture to cool for a few minutes.
  6. Step 6: Transfer the cooled creamer to an airtight container. It can be stored in the refrigerator for up to 5-7 days.
