- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- Cream together softened butter and granulated sugar until light and fluffy using an electric mixer.
- Beat in eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Drop rounded tablespoons of dough onto prepared baking sheets, leaving about 2 inches between each cookie.
- Bake for 8-10 minutes, or until edges are lightly golden brown. Centers will still be slightly soft.
- Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely. Dust with powdered sugar and add sprinkles, if desired.
Notes
For extra festive flair, use holiday-shaped cookie cutters. Store cookies in an airtight container at room temperature for up to a week.
